Cowboy Breakfast Skillet


A cast iron skillet with hash browns, pork sausage, eggs, and chopped vegetables

This has become one of my favorite breakfast dishes to make for the family. It's a hearty dish that warms the belly and the soul. It is very easy to make.


Cowboy Breakfast Skillet


Section 1: Ingredients


  • 4 cage free eggs

  • 32 oz bag of frozen hash browns

  • 1 tube of pork sausage (hot or mild depending on your preference)

  • 1 red bell pepper chopped

  • 1 green bell pepper chopped

  • 1 large sweet onion chopped

  • Salt and pepper to taste

  • Your favorite BBQ seasoning to taste


Section 2: Prepping and Cooking


  1. Preheat grill/smoker or oven to 400 degrees Fahrenheit.

  2. Preheat your cast iron skillet.

  3. Add the pork sausage and cook thoroughly.

  4. Remove sausage from the skillet and put aside to rest. Leave grease from the pork sausage as a base.

  5. Add the diced red and green bell peppers and sweet onion. Saute until the onions are translucent. Remove from the skillet and set aside to rest.

  6. Add the frozen hash browns and cook until golden brown and crispy.

  7. Add pork sausage, bell peppers and onions. Create four divots.

  8. Crack four eggs and add them to each divot.

  9. Evenly coat the top with salt, pepper and your favorite BBQ rub.


Place in the grill/smoker or oven for 18 to 20 minutes. Remove and let rest for 1 to 2 minutes. Serve. This dish will make four equal servings.
